I don't tend to leave product reviews for a whole lot of stuff on my Amazon Prime Account. My mom usually does that lol. But this chef's knife has made my job at Brio MUCH easier. We don't have people to come in and sharpen our knives like a lot of restaurants, so I had been considering getting a much more expensive knife for use at work. I knew I didn't want to cheap out, but I also didn't want anyone to steal a $300 knife. This is the perfect compromise. When I first took it out of the box, it was absolutely razor sharp. I could cut through receipt paper with the knife 4 inches from where I was holding it, and it even scraped plastic off of a cheap cutting board like it was giving a shave. I am now enrolled in culinary school and have bought an entire Regalia knife set and I can not WAIT to get them here.
